
Preheat the oven to 180°C. Cut the apples into even halves and then into quarters. Remove the core. Set aside.
Squish cold butter into the pan with your knuckles and sprinkle over the sugar.
Add the apples and turn slightly on one side by tightly packing into the pan neatly laying against one another.
Measure out the puff pastry circle and lay over the fruit, then tuck around to the base.
Place the pan on medium heat and warm until sugar and butter caramelise and turn brown around the edges, then place in the oven and bake for 45 minutes to 1 hour until pastry is golden brown.
Turn out onto a plate and serve with Vanilla Ice cream, Mascarpone or Chantilly Cream
