Ingredients
2 Tbs oil
2 medium onions – finely chopped
4 cloves of garlic and equivalenet amount of ginger – peeled and crushed
1 can of chopped tomatoes
1-1.5 tsp Tartan Sari Curry Paste (either Sorpotel Paste or Rechard Masala)
400-500 g fresh or frozen vegetables
200 g potatoes or kumara – peeled and diced
1tsp salt
1/2 cup water or coconut milk (optional)
chopped coriander (optional)
Method
Heat oil in saucepan. Add onions and fry on a low heat for 5-10 minutes. (Do not rush this step as this is where the magic happens!)
Add garlic and ginger and fry for two minutes. Stir in the Tartan Sari Curry Paste and cook for another minute.
Add chopped tomatoes, salt and potatoes/kumara. Bring to the boil and simmer for 5-10 minutes, stirring occasionally. If the mixture looks dry add up to 1/2 cup of water or coconut milk. Now add the vegetables and stir. Cook for another 5-10 minutes or until the potatoes/kumara are soft.
Sprinkle over some freshly chopped coriander.
Serve with steamed rice or naan and some Tartan Sari pickle on the side of course!
