If you love the beautiful sweetness of tree ripened peaches , gently baked in the oven – then this is the recipe for you!

We love our local North Canterbury Amberley Farmers Market,  and  we regularly get inspired – we all  love fresh healthy FOOD!  Goats  Yoghurt and EVOO are are perfect partners , and we have added a Maple Syrup – divine!

Ingredients

  •  4x fresh, ripe and sweet Peaches – mouth watering stage.
  • Quality Maple syrup-  A) allow a small amount for baking , &  B) about 3- 4 Tbsps for the sauce
  • 1/2 a cup of the best &  freshest Goats Yoghurt you can find,
  •  A few Pomegranate seeds – they look very pretty and compliment  the slight sharpness of the EVOO sauce

and of Course !

5 TBSPs of Two Old soldiers Extra Virgin Olive Oil !!

 

Method

Baked Peaches

  • If you are feeding 4 then allow at least 1 beautiful peach per guest  , and another couple for good measure . Find the sweetest and ripest off the tree, or  your local Market or fruit store.
  • Slice off the stone , gently warm in a low Oven  for about 40mins with a little Maple syrup. Don’t go mad with the syrup  as the peaches sweetness need to be the star.

EVOO Dessert Sauce with Goats Yoghurt and Maple

Put the Goats yoghurt, EVOO and maple syrup together in a blender – Pulse to combine

Find a pretty sauce boat and place 3/4 of the mixture in it – cover and place in fridge. Reserve some for dressing the main serving plate

To Serve:

If you have a beautiful plate – use it , Arrange the baked peaches – gently add a few tablespoons of the EVOO sauce and sprinkle with a few of the Pomegranate seeds.

Bring the extra sauce to the table in its pretty sauce boat.

Remember the goal is not to sweeten the sauce or the peaches with maple syrup – Albeit you can adjust to your taste . We love the sweetness of the Peaches and the slight sharpness of our EVOO coming together
