The perfect and pretty summer “Kicktail” that’s as easy to make as it is to drink. Blackberries are muddled with thyme and honey then topped with Plum Sidekick Soda and a splash of fresh lemon juice. This colourful and refreshing spritzer requires just five ingredients and about five minutes of prep time. It doesn’t get more delicious.

Ingredients

1/2 cup of fresh or frozen boysenberries

1 handful of fresh mint tips and thyme

4 tablespoons fresh lemon juice

1 loaded tablespoon of honey

3 bottles Plum Sidekick Soda

Method

Start off by muddling the blackberries with mint, thyme, honey and the lemon juice to infuse and extract colour (if using frozen let the berries thaw slightly first).

Strain the mix into a glasses filled with ice and a few whole berries and then top up evenly with Plum Sidekick Soda.

Garnish with mint, thyme and fresh berries. If you have time and want to make these for a special occasion you can freeze edible florals into the ice cubes the might before.
